Chesapeake Oysters Rockefeller Tartin
Traditional Oysters Rockefeller consists of oysters on the half-shell that is topped with various other ingredients including, but not limited to: spinach, shallots, parsley, garlic, sweet butter and bread crumbs. Staring into my fridge at a jar of Chesapeake Bay Select Oysters that I had just purchased from my favorite fish monger Bill Merkle of NBS Seafood, Facebook: NBS Seafood my wheels were turning… how to get that perfect balance and fresh oyster satisfaction of Oysters Rockefeller from oysters void of their shells… then it hit me! Place the spinach mixture below the fresh oysters, instead of on top of it… house it in a thin, flaky butter, and herb crust, top with the crumb mixture, and bake at a high heat till filling is hot, and oysters are just cooked through, and edges are curled. The result: Chesapeake Oysters Rockefeller Tartin! I set myself in motion to see this through!


Chesapeake Oysters Rockefeller Tartin
Ingredients
Pastry:
1 cup all purpose flour
1/3 cup chilled sweet butter cut into small bits
1/2 teaspoon sea salt
1 teaspoon herbes de provence
enough ice water to bind
Pastry Directions:
- Mix Flour, butter salt & heres de provence in a large bowl. Cut in 1/3 cup sweet butter bits with a pastry cutter till mix resembles course flour. Slowly pour in ice cold H2O till dough just holds together. Roll out to fill a tart pan. Prick all over with a fork
- Bake in a 375 degree oven for 20 minutes or till brown.
Filling Ingredients:
2 cups frozen chopped spinach thawed
3 tablespoons sweet butter
1/2 cup chopped shallots
1 tablespoon diced garlic
4 oz feta crumbles
3 drops hot sauce
salt & pepper to taste
Filling Directions:
- Place thawed spinach in a colander to drain
- Saute shallots & garlic in sweet butter mixture. Add hot sauce, salt & pepper to taste.
- Mix with feta & place in pastry shell.
Topping Ingredients:
1 cup seasoned bread crumbs
1/2 cup fresh parsley
2 tablespoons melted sweet butter
Topping Directions:
- In a Bullet or Blender place bread crumbs, parsley, and butter. Pulse till fine crumbs.
Final Prep:
- Place spinach mixture into baked pastry shell
- Top with fresh oysters
- Cover with Crumb Mixture
- Spray heavily with Olive Oil
- Bake for 40 minutes or till bubbly & done.
- Serve
