
Duck Fat Potato Balls are a savory delight! Crunchy on the outside creamy and rich on the inside. Serves 8 as a side dish; many more as an appetizer.


Potato Balls Ingredients:
6 medium potatoes
1 egg egg beaten
3 tablespoons duck fat melted into milk
½ cup hot milk
salt and pepper
Panko bread crumbs
1/4 cup mild grated cheese
Pare and boil potatoes.

Drain and mash very smooth and light.
Add butter, hot milk, grated cheese, salt and pepper to taste, and beat until fluffy. While hot, shape into little balls, roll in egg and bread crumbs.

Place in a hot oven (450° F.) on parchment or a well-buttered cookie sheet, and brown delicately.
Serve immediately.
